Old English Fudge

If you haven’t tasted traditional Old English Fudge, you are in for a treat.

If you haven’t tasted traditional Old English Fudge, you are in for a treat.

The recipe originated in England’s West Country – Devon and neighboring Cornwall, where many Brits go on holiday and is home of the “English Riviera”.

The dramatic coastline and charming villages are as captivating as is the tranquility of the moors that dominate the area.

Devon produces incredibly rich butter and cream, and is famous for it’s clotted cream that stars in that wonderful afternoon indulgence – Cream Tea.

It’s worth the trip to England just to taste that marvelous clotted cream on a warm scone.

Ingredients
  • 1lb granulated sugar
  • 1/2 a pint of thick cream ( double or whipping)
  • 2 oz butter
  • 3 tablespoons water
  • 1/4 pint milk
  • half teaspoon od good vanilla essence.

Method

1) Put all the ingredients into a strong thick based saucepan and heat gently stirring continuously until all the sugar is dissolved.

2) Then bring to the boil and boil gently stirring occasionally until the mixture reaches "soft ball" consistency. The most foolproof way to test this is to use a sugar thermometer and boil until Temperature reaches 235 - 238 F.

3) Remove from heat and beat fudge mixture thoroughly until it begins to thicken. Pour into a greased, lined tin and leave to set.

4) Cut into squares when cold.

DELICIOUS!

Tip* To make chocolate fudge simply add about 6 oz good quality dark chocolate broken into pieces once the sugar has all dissolved. Stir until the chocolate has all melted then carry on as before.
